Shun Classic Scalloped Santoku Knife (17.8cm) Shun Classic's amazingly sharp blade is famous for both edge retention and ease of sharpening. Each blade has a core of VG-MAX "super steel" clad with 34 layers of pattern Damascus Steel on either side of the core (68 total).While the patterned layers enhance the knife's beauty, they also support the core and add stain resistance. Combined with the elegant, slim tapered handle in black pakkawood, the result is an overall aesthetic design with quality and functionality at its core. A Santoku is a Japanese all-purpose kitchen knife. Like a chef's knife, the Santoku is used for just about every cutting job in the kitchen. The name means "three virtues." Depending on who you ask, the name refers either to the three types of foods it works well with; vegetables, proteins, and fruit or for the three types of cuts at which it excels; slicing, dicing, and chopping. Hollow-ground indentations on the blade help reduce friction so the blade glides through the food easily.
