Cabernet Sauvignon is our heart and soul. It reflects our coastal vineyards and the natural
purity of our remote environment. The smallest details are scrutinised throughout the
viticulture and winemaking process, hand-selecting fruit from our best Cabernet blocks to
create a true site expressive wine.

VINTAGE
A challenging growing with variable weather conditions. An
unseasonably warm end to winter led to early bud-burst,
followed by a cooler and windier spring, resulting in yield
reduction. A consistently warm summer assisted with early
tannin ripeness and balanced flavour development but meant
harvest timing was critical to ensure peak varietal expression.
HARVESTED 27 March to 4 April 2015
OAK French oak, 18 months, 50% new, 50% two-year-old
CELLARING 20 years
COLOUR Medium dark red
NOSE Sweet black fruits, graphite, mocha and dusty oak
PALATE Vibrant sweet black fruits, hints of cocoa and cedar
FOOD MATCH Complex, great length and balance, supple tannins
METHOD
Hand-picked bunches were destemmed, sorted and fermentated
in open and upright fermenters with regular, gentle pumpovers
or plunging. Select parcels remained on skins for up to 19 days
and the wines then matured for 18 months in French oak with
three-monthly rackings, prior to blending, fining and filtration
with bottling in January 2017.
