Buying an existing vineyard without really knowing its potential is something you could lose a lot of sleep over. Dig all the holes you like and analyse the soil to within an inch of its life but no amount of tests can tell you what these vines will do under the influence of your own guiding hands. In the end you just have to go with your gut. Like choosing a life partner, when you know you know Just eight acres planted to eight varieties meant not only could we pretty well manage the farm by ourselves, but have some fun with the varieties to boot. And being just 50km from the southern most point of mainland Australia meant we had become stewards of some seriously cool climate fruit to make the wines we both love to drink.

One of the biggest decisions is exactly when to pluck the grape from the vine. Too early and the acidity will dominate. Too late and the alcohol will. Getting the timing right is everything if you want your wine to truly express your fruit and where it¿s from. Having named the date we harvest the grapes by hand, picking into small 10kg crates to minimise berry damage and early oxidation. The grapes then take a gentle tractor ride of no more than 100m to the cellar where they¿re tucked into a refrigerated reefer for the night. WINE FARM

Pinot Noirs are savoury, spicy and very earthy. Organic and soil are words that come to mind immediately and they are detailed and energetic to match. PWS
