Manually harvested fruit, destemmed and fermented at low temperature with its own yeasts. Maceration for 15 days, the wine sits in 225l French barriques for 8 months. Ectremely poor soil, goblet pruned. Converting to organic viticulture. WINEMAKER NOTES
