With Orange being the highest wine growing region in Australia, grapes grown here not only enjoy all the benefits of its cooler temperatures and unique topography, but also benefit from over 9 hours per day of direct sunshine during the growing season. The combination of both the cooler climate and plentiful sunshine is vital to the fruits ability to develop intense aromas and maintain flavour, giving these grapes a long mouth feel and flavour profile. Sourced from one single vineyard, the fruit was handpicked in the early morning of March 16th, 2021, taking advantage of the cool morning temperatures. The whole bunches were then hand sorted into the fermenter full of inert gas. The fermenter was sealed up and left for 10 days allowing for Carbonic Maceration to take place. The fruit was foot stomped for a further 6 days when we then basket pressed it after 24 days on skins to oak to finish the fermentation process. 12 months maturation in oak 15% of which was new. It was blended with 40% Whole Berry Pinot Noir. WINEMAKER NOTES
