The cornerstone of Les Bosquets is diversity. So we started to dissect everything to understand. So,  we reworked the winemaking processes, with the introduction of plot by plot vinification, the renovation of the underground cellar for aging, and finally, in 2016, the culmination of this thought with the creation of a micro-vinification workshop in addition to the original cellar. 10 years later, we went from 1 wine to 7.

I remain convinced that in an appellation like Gigondas, we can make 1000 different wines. Diversity is everywhere. Altitude, orientation, soils, subsoils, exposure to wind, sun, the influence of wood, in short, everything requires approaching things in detail.

So we are going to continue to explore. And who knows, maybe one day, as a great winemaker from the cool, sandy terroirs of Châteauneuf du Pape predicted, when I have mastered all my terroirs sufficiently, I will move on to the composition stage, and will make just one wine, which will crown these years of learning.

The Plateau has been produced since the arrival of our plot workshop in 2016. Given its low volume, it is now vinified in open demi muids. Very old Mourvèdre, almost pure, planted with multiple grape varieties (Grenache/Syrah/Cinsault/Counoise/Clairette). Whole harvest. Length, racy, tension, minerality. The plateau is more monolithic than the Grenaches, but what aging potential. 18 months of aging in very old demi muids (600L). WINEMAKER NOTES
