We work with a mix of traditional and unique varieties that are suited to each region. This includes Riesling, Vermentino, Sangiovese and Cabernet from the Clare Valley; and Chardonnay, Gamay and Sangiovese from the Adelaide Hills. The 2023 Pigato is a skin-contact wine, and the bitterness of that component makes me smile as I taste it. There are notes of dehydrated orange peel, lemon and grapefruit, squeezed lime and sea salt¿it's throwing salty Margherita vibes¿plus jalapeño, coriander and white pepper. Bottled unfined and unfiltered, with 50 parts per million of sulfur added. 10.1% alcohol, sealed under Diam. ERIN LARKIN
